Increased intake of selenium decreases the risk of breast, colon, lung and prostate cancer. Selenium also preserves skin elasticity; slows the aging and the hardening of tissues through oxidation; helps in the treatment and prevention of dandruff. The best natural sources of selenium are ALMONDS, BROCCOLI, CABBAGE, CELERY, CHICKEN, CUCUMBERS, OATS, RICE, SALMON, SUNFLOWER SEEDS, SWORDFISH, TUNA and WHOLE WHEAT FLOUR. As a nutritional supplement, selenium is available in commercial multivitamin formulas, in doses ranging from 25 to 200 mcg. Selenium from organically bound selenium yeast is commercially packaged in 100 and 200 mcg capsules by various pharmaceutical houses. No USRDA for this nutrient has been established however the provisional USRDA of 50-200 mcg seems to be a sensible supplementary range. Also see: VITAMIN A and/or BETA CAROTENE, and VITAMINS C and E. SLIPPERY ELM BARK TEA is a pain reliever. SOUR SALT (See: ASCORBIC ACID) SOY (ta-tou) which literally translated means ^(3)(the) greater bean^(2), has been cultivated for nearly 5,000 years. A diet high in soy protein can dramatically lower blood cholesterol levels. People who substitute SOY for animal PROTEIN tend to reduce harmful low-density lipoprotein (LDL) levels significantly (in excess of 10%), nearly as much for triglycerides by nearly the same and total cholesterol levels by about 9%. Furthermore, there seems to be no significant effect on high-density lipoprotein (HDL), the ^(3)good^(2) cholesterol which is good news because usually when total cholesterol levels drop, HDLs tend to drop too. Researchers in Italy have found LDL consistent decrease by as much as 25% and total cholesterol by 23% for people who use soy instead of animal sourced protein. SOY is loaded with phytoestrogens, plant hormones that don^(1)t occur in other vegetation, and these phytoestrogens have some cholesterol lowering ability. Many women look to the phytoestrogens in soy foods to help ward off the troubling symptoms of menopause. All forms of SOY protein also conferred cardiovascular protection, as referred to in the SOYBEANS, SOY BRAN and TOFU commentaries. NOTE: In 1995, there were a some serious articles on the subject of SOY in the Harvard Health Letter (November); University of California at Berkeley Wellness Letter (November); The New England Journal of Medicine (August 3), and in Newsweek (August 14). Even Reader^(1)s Digest got into the act with their December issue, which addressed the benefits of soy. SOYBEANS are an excellent source of are an excellent source of complex carbohydrates and protein; high in blood building IRON, blood-regulating POTASSIUM, and bone-building CALCIUM, also FOLATE, FIBER, PHOSPHORUS, VITAMIN B-1 and ZINC. SOYBEANS contain anticancer protease inhibitors and particularly for breast cancer. Among the bean's claims for special attention in the diet are prostate and other cancer prevention including colon cancer, and constipation control; cholesterol levels, as noted (below), and weight control. SOYBEANS can be used as a substitute for milk. SOYBEANS are loaded with pectin which is also why lower cholesterol levels are achieved. Also in this regard see: ALFALFA, B-SITO, DRIED BEANS, BRAN, BUFFALO MEAT, CALCIUM, CHOLINE, CHOLESTEROL, BAD CHOLESTEROL, ELEVATED CHOLESTEROL, CHROMIUM, COIX FRUIT, COPPER, CUCUMBER, DIABETES, EVENING PRIMROSE, FATTY ACIDS, GARLIC, GOOD CHOLESTEROL, GRAPEFRUIT, HDLs, HEARING DISORDERS, HEART and CONGESTIVE HEART FAILURE, INOSITOL, KELP, MINERAL COMPLEX IRON, KIDNEY, LDLs, LECITHIN, OATS, ONION, ORANGES, OSTEOPOROSIS, PAPAYA, POLYUNSATURATED FATS, PUMPKIN, RYE GERM, SATURATED FATS, COMMON SENSITIZING SUBSTANCES, TOFU, TUMERIC, VITAMIN B-3, VITAMIN E (derived from SOY) and/or CHINESE YAM entries. SOY BRAN is high in fiber and helps relieve constipation and hemorrhoids, and in proper dietary balance prevents cancer. Also see CORN, OAT, RICE and/or WHEAT BRAN entries. Note that TOFU is condensed SOY PROTEIN, but the skin of the bean contains most of the phytoestrogens. Some of the dark particles found in the powder of certain higher quality products are an indication of their higher phytonutrient content. SOY CANDLES - Since its development in the mid 90s, soy wax has become a popular medium for making candles. Candle lovers who are health conscious and/or adversely affected by breathing chemicals prefer soy wax because it is an organic compound that releases no toxins when burned. SPROUTS have a higher percentage of protein than their original seeds. Their B VITAMINS increase three to ten times for protection against impaired immunity and fatigue. Sprouting creates VITAMIN C even when dry seeds don^(1)t have any. Some sprouts inhibit genetic damage to cells caused by some cancer-causing agents. (See: ALFALFA and/or WHEAT entries). SQUASH SEED in cooking enables dieters, diabetics, hypersensitives and those concerned about heart disease to season foods without adding extra calories or fat. Squash is loaded with fiber for effective weight-loss dieting, potassium and magnesium for combating high blood pressure and stroke, and VITAMIN A to fight against cancer and CALCIUM for strong bones. To combat cancer, some squash varieties contain extraordinary amounts of VITAMIN A. SQUASH SEED may also be used as a SALT SUBSTITUTE. (See: Various SUMMER and WINTER SQUASH entries). Natural BETA CAROTENE of the quantity and quality derived from SWEET POTATOES can protect against tumor growth through boosting white blood cell activity. (Also see: RED (CHILI) PEPPER and/or CAYENNE). SWISS CHARD is high in VITAMIN A, FIBER, and VITAMIN E, and is hence useful in cancer prevention.
